Bake the Pain Away

Yup. It got me. The stupid, sniffly common cold. My eyes hurt, I can barely breath through my nose and I have a pathetic little cough trying to escape from my throat. I'm trying my hardest not to give in to it, channeling a new activity to fix my sickness.

Being ill sucks. Often, I fully commit to feeling ill and curl up in ball with Lemsip and a good bit of cheesy TV.
Other days however, I just about manage to power through the frustration of blowing my nose every five minutes and get on with my day, simply pretending that I'm not ill.
Today, I am trying to make it one of those days. It's a lovely sunny day down here in Cornwall - not to rub it in for those of you who are stuck in snow right now. I've just walked back from Asda, the first stage of today's action plan complete (even though I forgot the bloomin' Lemsip!! But that's fine... I'm not ill, right? *cough*)
I am planning to hang out the washing in the glorious sunshine, and then dance around the kitchen and bake banana bread - despite my inabilities as a baker.
Courtesy of the Bosh! Vegan Cookbook (which I will plug until they notice me), I have bought all I need to make a chocolatey, nutty banana bread that I am hoping will cure my symptoms of the sniffles.
I'm excited, because I get to use the shiny new blender I got for Christmas, but scared also because I don't know if my head can handle the noise.
Fingers crossed.
I hope that wait for this beautiful bake to rise is worth the effort I have to make in this state. Just know that I'm trying.

Banana Bread Recipe according to Bosh!:
250g plain flour
75g light brown sugar
75g white sugar
1/2 tbsp cocoa powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp ground allspice
110g butter/ dairy-free butter
3 bananas
60 ml almond milk
1 tsp apple cider vinegar
1 tsp vanilla extract
60g dark chocolate
50g pecans
Method:
1. Blend all ingredients apart from chocolate and pecans together until you get a thick mixture
2. Remove the blade from the food processor, break up the chocolate and pecans and mix them in
3. Bake in the oven at 170 degrees for 60-65 minutes (Mine was done in about 45-50)
